My kids nag me constantly to buy Kettle chips, so this trip to the grocery store I gave in. I thought to incorporate them into our dinner and immediately thought of salmon. The kids love it, and I love the fact it's healthy and delicious. When paired with the crunchy Kettle chips and the zest of lime it makes for a great pair. A quick, easy and elegant dinner!
Kettle Crusted Salmon with Lime

Salmon fillet ( mine was almost 2 lbs)
1c. kettle chips crushed
the zest of one lime
1T. chopped dill
2 T. olive oil
Salt and Pepper
Crush Kettle chips in a ziploc bag
add lime zest, dill and olive oil mix together
salt and pepper the fish and press the kettle chip mixture to adhere to the fish
Roast the fish at 400 for 20- 25 min.
