Sausage & Peppers

 I am sure you have many meals that you remember from your childhood, and growing up in an Italian
Photobucketfamily, sausage and  peppers was one of mine. My mother would make sausage and pepper sandwiches and we all loved them. Unfortunately,   she is not around for me to ask her how she prepared it, so I have adapted a recipe from Giada and changed it a little bit. Let me tell you, it is amazing, the flavor is phenomenal. I use all three color peppers, orange, yellow and red and sweet turkey sausage rather that pork sausage. My mother and grandmother would definitely be proud.



Sausage and Peppers

Original recipe from Giada De Laurentiis




1/4 cup olive oil
1 or 1/2 pounds sweet turkey sausage.. or you can do half sweet half spicy
1 red bell pepper sliced
1 orange bell pepper sliced
1 yellow bell pepper sliced
1 large yellow onion sliced or 2 medium
1tsp. kosher salt
1 tsp pepper
1/2 cup fresh basil chopped
1 tsp. dried oregano
4 garlic cloves, minced
3 tablespoons tomato paste
1 cup Marsala wine
1 15 oz can Italian style chopped tomatoes
1/4 tsp. red pepper flakes
6 Italian rolls

Heat the oil in a skillet and brown the sausage
Remove from the pan and drain on paper towels
on Medium heat, add the peppers, onions, salt and pepper and cook about 5 min. Add the basil, oregano, and garlic and cook a few minutes add in the tomato paste.. add the wine, tomatoes and red pepper flakes. Stir and bring to a simmer. Cut the sausage into slices and add back into he pan. Simmer until the sausage is cooked through and the sauce has thickened. Maybe 20 - 45 min...

Serve with you favorite rolls
