Grilled Peach Salad with Champagne Vinagrette

The summer is winding down and I have yet to make anything with peaches! I have the fondest childhood memories of my mom's amazing peach pie. Peaches were her favorite fruit and in August we would go to the orchard and get the biggest peaches we could find. They were so delicious, juicy and sweet.

This recipe is far from a peach pie, but it is really delicious. I use butter  lettuce, but you can substitute with your favorite lettuce blend . I love the  tenderness of the baby butter lettuce in combination with the soft juicy peach and the saltiness of the feta and the crunch of the pecans.

Grilled Peach Salad With Champagne Vinaigrette

Ingredients


Dressing:

3 tablespoons Champagne vinegar

1 tablespoon Dijon mustard

1/3 cup olive oil

1/2 teaspoon salt

a pinch of pepper
a pinch of sugar

Salad:

3 peaches, pits removed and cut into wedges

1 tablespoon olive oil

1 teaspoon salt

5 cups Butter lettuce

1/2 cup chopped pecans

1/3 cup crumbled feta cheese

Directions

Preheat a grill pan to medium-high heat.



Dressing:

Combine the  Champagne vinegar and Dijon in a small bowl. Slowly pour the olive into the bowl, whisking constantly to emulsify. Season with salt, pepper and add the pinch of sugar



Salad:

Place the peaches in a bowl and drizzle with olive oil. Sprinkle with salt and toss well. Place on the grill and cook for 1 to 2 minutes on each side.



Place the butter lettuce in a large bowl. Add chopped pecans, feta, and cooked peaches. Drizzle salad with dressing and toss to coat.

*Cooks note* do not drench the salad with the dressing. Butter lettuce is so tender and soft and will get wilted instead of crisp if you put too much dressing on.
