This is a fabulous way to enjoy zucchini...It is delicious and even the kids gobble it up! Normally, I pan fry them in olive oil and drain them on paper towels. However, this time I tried a shortcut and drizzled them with olive oil and baked them. Try them whatever way you wish!
Oven Fried Zucchini

Extra Virgin Olive Oil
2 beaten eggs
2 cups bread crumbs
1/2 cup Parmesan cheese
salt and pepper
Dredge the zucchini slices in egg and then in the breadcrumb mixture
Drizzle with olive oil and put on a parchment lined baking sheet and bake at 400 for 25 minutes if you have a small zucchini.. Mine took 40 min because the slices were so large!

Love Zucchini... I made a zucchini bread that is to die for using a very old recipe from my Mother. You will absolutely love it. I'll send it over to you to try.
