Rich Banana Bread



If there is one thing I make quite often, it's Banana Bread or Banana muffins. My whole family loves it and its a quick and nutritious breakfast for them. A have a favorite banana muffin recipe, a favorite banana chocolate chip bread recipe  and I was looking for another "plain" banana bread recipe. So, I came across this one and decided to give it a try. I added 1/2 tsp of cinnamon and 1/4 tsp of nutmeg because the recipe does not call for that and I feel those are staple flavors that should be in a banana bread recipe. Okay, I have said banana 8 times in this post!!  However, I have to say it one more time--- Make sure your banana's are ripe, that means BLACK people! Or else, you will not get the great flavor, and it will taste like much of nothing!

Rich Banana Bread

1/2 cup butter melted ( 1 stick)
1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts (optional)
  • 2 medium bananas mashed
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth.
  3.  Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan. bake for 1 hour.. every oven is different so it could be a few minutes longer or shorter-- do not over bake or you will have a dry bread!
stir the four mixture into the butter mixture












fold in the mashed bananas, sour cream and spices add nuts if you wish

I've made banana bread a hundred times and not once did I think to put sour cream in it - yummy!
