Simple and Delicious

Honestly, this is about as easy as it gets. Nobody has an excuse not to make this meal for their family because it is down right easy! I have  a lot going on this week an easy is my middle name.. okay, In reading that back, that doesn't sound too good!! SIMPLE is my middle name this week, as far as dinner is concerned!

My family loves asparagus, so I toss them in olive oil and lemon juice and add a basic ravioli with chicken in a brown butter sauce ( sounds fancy, but I promise It's not) the brown butter just gives it another flavor, it nuttier and rich. I then finish it off with some chunks of Pecorino Romano cheese.

This dinner can also be portioned out small and served as a side dish alongside chicken or fish. Especially if you are using just a cheese ravioli.

Dinner is served in a snap and you didn't slave away in the kitchen!

Ravioli and Asparagus in Brown Butter Sauce


Bliss n Tell

1 package family size Ravioli ( whatever kind you wish)
1 bunch fresh asparagus chopped in half
1/2 lemon juiced
8 tablespoons unsalted butter divided
Extra Virgin Olive Oil
Pecorino Romano Cheese
Salt and pepper to taste


Chop your asparagus in half

In a saute pan add asparagus with enough water to cover them.. boil on medium heat about 4 minutes.. take them out to drain.  In the same saute pan melt  2 tablespoons of butter and add enough extra virgin olive oil to coat the pan.. add the chopped asparagus back in the pan to saute on medium heat until soft about 6 more minutes.

Bring a large pot of salted water to a boil over high heat, add the ravioli and cook about 5 minutes.. drain

Add the asparagus back to the pan and squeeze the lemon juice on top.. toss with a little more olive oil.
 Set aside.  Melt the remaining butter ( the 6 T) in the saute pan on medium heat and wait for the butter to become a golden brown.. toss with the Ravioli and asparagus.. top with the Romano cheese and garnish with a lemon

add salt and pepper to taste!
