California BLT Pasta
My Daughter loves BLT's, so much so that she orders them when we are out to breakfast sometimes! So, I created this meal especially for her. I do dress the past with a light mayo, but put lemon zest and basil in it to freshen it up and make it like no other BLT pasta out there... and it's California style because it has... you guessed it! AVOCADO!

Ingredients:
1 cup fresh tomatoes diced ( I also included 1/2 cup of orange tomatoes)
1/2 avocado sliced
5 strips of bacon cooked and chopped
2 cups romaine lettuce
1 box your favorite pasta.. I like gemelli
salt and pepper
pour about 1 tsp of the bacon drippings on the cooked pasta and toss
love the colors!
Dressing:
3/4 cup of light mayo
zest of 1 lemon and a little squeeze of it as well
1/4 cup chopped basil leaves
mix all together and toss it with the cooked pasta. Add the lettuce at the bottom of the bowl, then the pasta, avocado,tomatoes, bacon and toss it with the lemon basil mayo dressing and some salt and pepper to taste.
